Mickey Mouse Clubhouse Sugar Cookies

For my son’s Mickey Mouse Clubhouse birthday party, an assortment of sugar cookies helped round out the Clubhouse theme.  Minnie & Mickey Mouse rainbow cookies added color to the treats table and dog bone cookies were the perfect way to include Pluto in the festivities.  Both cookies were simple, festive additions to the dessert spread.  I used one of my favorite cookie combinations: puffy sugar cookies and vanilla buttercream frosting.

There are endless ways to decorate these Mickey Mouse Clubhouse cookies but the simple combination of old-fashioned, puffy sugar cookies and buttercream frosting is sure to be a hit!
Ingredients
Sugar Cookies
  • 3¼ cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp nutmeg, optional
  • ½ cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1½ tsp vanilla
  • ½ cup sour cream
Buttercream Frosting
  • 3¾ cups powdered sugar
  • ½ cup butter, softened
  • 1 tsp vanilla
  • 3 Tbsp milk
  • Rainbow-colored M&M's
  • Rainbow sprinkles
Instructions
Sugar Cookies
  1. Cream the butter and the sugar together.
  2. Add the egg, vanilla and sour cream and mix well.
  3. Gradually add the dry ingredients, stirring until a soft dough forms.
  4. Wrap the dough in plastic wrap or place it in a sealed container and chill it in the refrigerator for 1 hour or overnight. This will make it easier to roll out the dough.
  5. Remove half of the dough {letting the other half continue to chill in the refrigerator} and roll it out to ¼-inch thickness on a lightly-floured surface.
  6. Cut the dough with the cookie cutters of your choice {dog bones, circles, Mickey Mouse}.
  7. Repeat the process with the scraps of dough and the other half of chilled dough in the refrigerator. I have found that it is best to leave any dough that I’m not currently working with in the refrigerator. This way it stays chilled and firm and is easier to roll out.
  8. Place the cookies on a baking sheet. This is the time to decorate them if you are using sprinkles but if you plan to frost the cookies, leave them plain at this point.
  9. Bake the cookies at 400 degrees for 6-8 minutes until the edges and bottom of the cookies are just starting to turn a light golden brown. They will set up more as they cool so be careful not to overbake them if you want soft sugar cookies.
  10. Let the cookies cool for 10 minutes on the cookie sheet.
  11. Then, transfer the cookies to a wire rack and let them cool completely.
  12. Frost and decorate them as desired.
Buttercream Frosting
  1. Mix the ingredients and beat for several minutes until a smooth, creamy frosting forms.
  2. Add food coloring if desired. {Using food coloring will affect the consistency of the frosting so you can add more powdered sugar as needed.}
